Lemon and ginger make great companions in this muffin recipe, with a sweet ginger and lemon bite. The original recipe is done with a cream cheese frosting, but I found it to be too sweet, so I substitued the frosting with lemon peels and ginger.

I also love the fact that the ingredients put into making this delightful treat are packed to the rim with health benefits.

Ginger: is a digestive aid, it has anti inflammatory properties and is great for nausea. Ginger also holds some aphrodisiac properties, so consider adding ginger to that special Valentine's Day dinner.

Lemon:lemon is a great food for improving one's mood through consumption, as well as the aroma, and this lovely yellow fruit is rich in vitamin c.

Muffins

You Will Need

  • 2 cups flour
  • ¾ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup sugar divided into ¼ cup and ¾ cups
  • 4 tablespoons minced fresh ginger
  • ½ cup of butter unsalted
  • 2 eggs
  • 2/3 cups of plain yogurt
  • Juice from one fresh lemon
  • 4 tablespoons of grated lemon peel

Directions

Pre- heat oven to 400 degrees, spray your muffin pan, this recipe should make 12 muffins. In medium bowl whisk together your flour, baking soda and salt. In a medium sauce pan heat over medium high ¼ cup of sugar and minced ginger, may need to add 1 tablespoon of water, stir and cook until sugar has melted and ginger is soft, remove from heat and stir in your lemon peel.

In a separate bowl beat your butter on medium speed until silky, gradually beat in remaining sugar, and until fluffy, then add in one egg at a time, continue to beat at low speed for about 2 minutes. Add your yogurt, lemon juice then ginger mixture from sauce pan and beat for one more minute. Now add this mixture to your flour mixture and beat until well mixed. Bake muffins for 20 minutes or until they have reached a golden brown color, the remove them and place on wire rack to cool.

Candied Topping

You Will Need

  • 3 tablespoons sugar
  • 1 tablespoon grated lemon peel
  • ½ cup thinly sliced lemon peel
  • ½ cup thinly sliced ginger real thin
  • 2 tablespoons melted butter
  • 2 squeezes of fresh lemon juice

Directions

In sauce pan again cook 1 of your 3 tablespoons of sugar, lemon peel slices and ginger slices until peels are coated set aside to cool, add your lemon sueezes and mix around ingredients. Brush your muffins with melted butter, sprinkle with ginger and lemon peels. Yumo’s
