Crepes For Dessert

Crepes It's Whats For Breakfast
You can make crepes it is easier than most people think it is. Crepes are good for any meal I think, breakfast of course, but dessert too. This is one of my children favorite desserts, next to candy of course. The best thing you can do with making crepes is to let the batter sit and practice in this case practice makes perfect.
Crepes
Ingredients
- 3/4 cups of flour
- 3 large eggs
- 3/4 cups plus 3 tbs of milk
- 2 tbs sugar
- pinch of salt
- 2 tbs of melted unsalted butter
Directions
Whisk together the flour, egg, mikk, sugar,salt and 11/2 tbs of the butter in a medium bowl, whisk until a smooth batter is formed(the thickness of heavy whipping cream) cover and refrigerate for 1 hour. Heat a crepe pan over medium heat, or a small heavy non stick pan if you do not have a crepe pan. When pan is hot brush with with a light coating of the lefover butter. Ladle with 3 tbs of the batter tilting the skillet to evenly coat bottom of pan. Cook until golden brown or the top begins to look dry this should take about 1 to 2 minutes.Using a flat spatula carefully turn the crepe over cook on the second side for 30 seconds.
Transfer to a plate and cover to keep warm
Crepes can be filled with just about anything, I use different jams or perserves, even fresh fruits fo a healthier take, or one of my favorites is a cream cheese filling. You can do a cram cheese fresh fruit crepe so yumo's.

Ingredeients
- 1 package cream cheese
- 1/2 cup confectionery sugar
- 1/2 cup fluff
Directions
Soften cream cheese, I don't feel comfortable heating cream cheese in a microwave you can I don't, leave cream cheese out on stove while cooking the crepes this is enough heat to soften, mix cream cheese, fluff, and confec. sugar in mixes un till smooth.
